Our fudge recipe has been passed down from generation to generation, dating back to the late 1800's.

We use old fashioned copper pots heated over a gas burning stove to mix our 25 pound batches.  The

ingredients are heated and then the boiling fudge is poured onto our 750 pound Vermont Marble

tables.  Once the fudge has cooled a large paddle is used to cream the fudge.  The "creaming"

process continues to cool the fudge and helps it thicken as it is formed and set into a long loaf. 

Finally the loaf is sliced and ready to be sold.

Webmaster's note:  When I arrived at the store to pick up this information a lady came into the shop and said her Grandson had requested that she go to the main corner in Solvang where a fudge shop was and please buy him some fudge as it is the best he had ever eaten.  The taste test, by the Grandmother, she agreed with the Grandson and promptly bought the 3 slice box.  Another Happy Grandma, Grandson, and customer. 12/99
