APPLE BROWN BETTY

  • 5 TBS melted butter
  • 2 cup homemade dry bread crumbs
  • 5 cup peeled, sliced tart apples
  • 1/2 cup brown sugar
  • 1/2 tsp. cinnamon
  • Grated rind and juice of 1/2 lemon
  • 1/3 cup hot water
  • Heavy cream
If your apples are full of flavor you won't need the lemon. Serve with heavy cream (can whip for whipped cream)

Preheat the oven to 350 degree F.  Butter a 1 1/2-quart casserole or baking dish, preferably one with a lid.  Toss the melted butter and crumbs together lightly in a bowl.  Spread about a third of the crumbs in the baking dish.  Toss the apples, sugar, cinnamon, and lemon rind & juice together in a bowl.  Spread 1/2 the apple mixture over the crumbs, add another layer of crumbs, a layer of the remaining apples, and a final layer of crumbs on top.  Add the hot water, cover with a lid or foil and bake for 25 min.  Uncover and bake 20 minutes more.
